One of our absolute favourite ingredients. A purée of fermented British beans full of rich umami flavour, with subtle notes of sherry. We use as a local replacement for soy sauce or miso in dressings, stir-fries, sauces, and marinades.
Fava Beans are high in plant protein and a good source of fibre. They are also rich in phytonutrients such as isoflavone and plant sterols found to be protective against cancer and high cholesterol. These tasty beans are also a source of vitamins A, C, and K, as well as phosphorus, copper, calcium, selenium, zinc and manganese, and a very good source of Folate. Fermented foods are also thought to promote good gut health.
