Olive green lentils from a small group of growers in Suffolk, Essex, Hertfordshire and Sussex, all of whom are working to create more diverse, regenerative farming systems. Tasty, versatile and easy to cook, these whole olive green lentils don’t need soaking and have a superb rich deep flavour. We like using them in spaghetti Bolognese, nut roasts, burgers, soups, stews, salads, and dips. They sprout well too!
Check for any discoloured lentils then rinse, cover with fresh water, bring to the boil and simmer for 15 to 20 minutes (until tender). Or add directly to stews and casseroles, the lentils will cook with the other ingredients.
